  • 1/2 cup sugar
  • 1/2 tsp cardamom powder

Instruction

Preparing Boondi Batter:

Sieve the gram flour in a vessel so that there are no lumps in it. Add baking soda to it.
Slowly add water to the gram flour and mix to make a medium-thick batter. The batter should be of liquid consistency but not too thin.
Divide the batter into two parts. Mix red food color in one part and yellow color in the other part. Mix these separately until the color is evenly incorporated into the batter.

Boondi Fry:

To make a boondi, you will need a ladle with two slots, one for making a Boondi and the other for frying. – Heat enough oil in a pan for frying. The oil should be medium-hot. To test, drop a small ball of batter into the oil. If it swells immediately without changing color then the oil is ready.
Hold the slotted ladle with small holes just above the oil (neither too high nor too low). Using a large deep spoon, spoon the batter (either yellow or red first) onto the slotted ladle. Spread it in a circular motion so that the batter falls into the oil like small drops from the hole of the ladle.
Fry the boondi till crisp and then drain on tissue paper or kitchen napkin to remove excess oil.
Prepare both the colored boondi in batches and collect them in a bowl.

Making Syrup:

While making boondi, mix water and sugar in a separate pan and boil until a stringy syrup is formed.
Add cardamom powder and a few drops of lemon juice to the syrup to prevent sugar crystallization.
Put the fried boondi in the syrup and leave it till it gets drenched in sweetness.
