  • 500 grams of boneless chicken
  • 4 large potatoes
  • 3 cups finely chopped onion
  • 10 green chilies (as per taste)
  • 4 inch piece of ginger
  • 14 cloves of garlic
  • 2 teaspoon turmeric powder
  • 4 teaspoons coriander powder
  • 3 tsp garam masala powder
  • 2 teaspoons black pepper powder
  • 1 cup chopped fresh coriander
  • 1 cup chopped mint leaves
  • 1 teaspoon salt (as per taste)
  • 2 tbsp cooking oil
  • 2 beaten eggs
  • 1 cup bread crumbs

Instruction:

Boil potatoes: Peel the potatoes and boil them until soft. Keep them aside to cool.

Cook the chicken: Add the chicken pieces, 1 teaspoon turmeric powder, 2 teaspoons black pepper powder, 1 teaspoon coriander powder and 1 teaspoon salt in a pressure cooker. Pressure cook the chicken for 3 whistles. If you don’t have a pressure cooker, you can boil the chicken in a pot until completely cooked.

Prepare the chicken mixture: When the chicken is cooked, open the cooker and check for excess water. If there is excess water then cook the chicken on high flame until all the water dries up. If you are using utensils, follow the same procedure. After this, let the chicken cool down.

Blend the chicken: Blend the chicken in a blender to make a thick paste. Be careful not to over-grind it; You want some pieces of chicken left over.

Prepare the spice mixture: Add 2 tablespoons of oil to a large flat-bottomed pot. When the oil is hot, add onion and fry until it turns golden. While the onions are frying, grind the ginger, garlic, and green chilies together in a mortar and make a thick paste.

Add spices: Add the ginger paste to the onion and fry until the raw smell of garlic goes away. Then add the remaining turmeric powder, coriander powder, and garam masala powder. Mix well and fry until the spices get mixed well into the onion mixture. Keep this mixture aside to cool.

Prepare the mixture: Mix boiled potatoes, pickled onion mixture, and fresh mint and coriander leaves on a plate. Mix everything together with your hands. Then, add ground chicken to the mixture and mix well.

Shape the cutlets: Form the mixture into small evenly sized patties and place them on a large plate or cookie sheet.

Coat the cutlets: With one hand, dip each patty into the beaten egg mixture and then into the bread crumbs to coat evenly. Set them aside on a large plate ready for frying.

Fry the cutlets: Heat oil in a large pan. When the oil is hot (on medium flame), fry the patties until they turn golden brown. Place the fried cutlets on kitchen paper to remove excess oil.
